Eggs $1.18
2 bags of English muffins $2.90
Cheddar $1.49
Peppers $2.69
Onions $2.19
Mushrooms $1.59
Spinach $1.29
***already had olive oil, non-stick spray & seasonings (salt, pepper, garlic powder, onion powder, Italian seasonings)

Makes 12 servings

Directions:
1. Preheat oven to 400 degrees F
2. Wash & dice all veggies
3. Heat a large pan over medium heat, drizzle with olive oil, & sauté veggies for ~8 minutes or until softened
4. Crack 12 eggs in a bowl, whisk & fold in veggies
5. Spray a casserole dish, add egg mixture & bake for ~15-18 minutes or until the eggs are fully cooked
6. Cut eggs into 12 squares, cut English muffins with a fork (trust me)
7. Make your sandwich with an English muffin, top with cheddar cheese, & store in the fridge (or freeze) in a large Tupperware
8. Microwave for 1 minute or air fry for 5 minutes
9. Enjoy!!
